1 teaspoon grated ginger
1 pound beets, peeled and shredded (if beets were purchase with greens, chop greens & include in salad)
1 large apple of your choice, cut in small pieces
1/2 cup pine nuts, sunflower seeds, and/or pumpkin seeds
3 tablespoons apple cider vinegar
1/4 to 1/2 teaspoon himalayan salt
black pepper to taste
1 to 2 tablespoons extra-virgin olive oil
Toss first 3 ingredients in a bowl.
In a separate bowl, wisk vinegar, olive oil, salt, and pepper to bowl.
Add liquid mixture to apple/beets and toss to coat evenly.
Taste and adjust seasonings.
Serve immediately on bed of lettuce or keep refrigerated.
You can garnish with other items of choice. Be creative, it’s your own masterpiece. Enjoy!
