Parsnip is a root vegetable and has no saturated fat, a good source of potassium, and a very good source of dietary fiber, vitamin C, folate and manganese. Many people see this in the produce section and don’t know what to prepare it.
Note that you cannot really mess up this recipe. Add spices and herb according to your taste.
2 parnips washed, peeled (if you want), and shredded
1-2 Tablespoons extra virgin olive oil or to taste
1 Tablespoon apple cider vinegar or to taste
1 Tablespoon Italian seasoning or to taste
one chopped up tomato
1-2 Tablespoons of chopped parsley or cilantro or fennel or whatever. If you do cilantro you may want to add Mexican seasoning instead of Italian.
salt and pepper to taste
